1 pound boneless, skinless chicken breast, cut into nugget-sized pieces
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 cup panko breadcrumbs
1/4 cup grated cheddar cheese (for convincing parents it's cheese)
2 large eggs
1 cup buttermilk
Vegetable oil for frying
1. In a shallow dish, mix together flour, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
2. Pour the buttermilk into a separate shallow dish.
3. Dip each chicken piece into the buttermilk, coating completely, then roll in the flour mixture to coat. Place the coated chicken on a plate or tray.
4. Dip the flour-coated chicken into the buttermilk again, then roll in panko breadcrumbs to coat. Place the breaded chicken on a clean plate or tray.
5. Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
6. Fry the breaded chicken nuggets in batches until golden brown and cooked through, about 5-6 minutes per batch. Drain on paper towels.
7. While the chicken is frying, melt a little bit of cheese in the microwave or in a saucepan over low heat to use as a "convincing" topping.
8. Serve the chicken nuggets hot, topped with a sprinkle of melted cheese to "prove" they're really cheese bites.
- For an extra crispy coating, chill the breaded chicken nuggets in the refrigerator for 30 minutes before frying. - If you want to make it even more convincing, serve the chicken nuggets with a side of marinara sauce or a dairy-based dip to reinforce the "cheese" idea. - Just like I used to sneak these into my meals, Hide a few for later! Store any leftovers in an airtight container in the refrigerator and reheat them in the oven or microwave for a quick snack. This recipe is perfect for secret kitchen adventures, and who knows, maybe you can even convince your family that they're really just eating cheese.
