My mom was angry at me as i had maggi for snack. So she used to cook healthy rawa dhokla instead.

1 cup rawa (semolina)

1/2 cup yogurt

1/2 cup water

1/4 teaspoon salt

1/4 teaspoon baking soda

1 tablespoon lemon juice

1 tablespoon ghee or oil

1 teaspoon grated ginger

1-2 green chilies, finely chopped

1 tablespoon chopped fresh cilantro

1/2 teaspoon cumin seeds

1. In a large bowl, mix together rawa, yogurt, water, salt, and baking soda. Let it rest for 30 minutes to allow the rawa to soak.

2. After the resting time, add lemon juice, ghee or oil, grated ginger, green chilies, and chopped cilantro to the rawa mixture. Mix well.

3. Just before steaming, add cumin seeds to the mixture and give it a gentle stir.

4. Grease a dhokla steamer or a metal cake pan with ghee or oil.

5. Pour the rawa mixture into the prepared steamer or cake pan.

6. Steam the dhokla for 15-20 minutes or until it's cooked through and a toothpick inserted comes out clean.

7. Remove the dhokla from the steamer and let it cool for a few minutes.

8. Cut the dhokla into squares or diamonds and serve warm with your favorite chutney or sambar.

- To get the perfect texture, make sure to not overmix the rawa mixture, and let it rest for the recommended time. - Add some grated carrots or peas to the mixture for extra flavor and nutrition. - This recipe is a perfect solution when you're craving something healthy and delicious, just like my mom used to make when she was trying to get me to eat something other than Maggi - a nostalgic reminder that sometimes, mom really does know best! Enjoy this guilt-free snack as a great alternative to instant noodles, and savor the love and care that goes into making it.
