1 cup mixed mess hall food (such as leftover vegetables, rice, and proteins)
1/2 cup chicken pickle, finely chopped
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons grated cheddar cheese (optional)
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, until fragrant.
4. Add the mixed mess hall food to the skillet, stirring to combine with the onion and garlic.
5. Add the chopped chicken pickle, dried oregano, paprika, salt, and pepper to the skillet. Stir well to combine.
6. Cook for about 5 minutes, stirring occasionally, until the flavors have melded together and the food is heated through.
7. If using cheese, sprinkle it on top of the mixture and cook for an additional 1-2 minutes, until melted and bubbly.
8. Serve hot, garnished with additional chopped chicken pickle if desired.
- For an extra burst of flavor, add a splash of hot sauce to the mixture. - If you're not a fan of strong pickle flavor, start with a smaller amount and taste as you go, adding more to your liking. - This recipe is a perfect solution when you're not in the mood for the usual mess hall food - the chicken pickle adds a much-needed kick to make it edible and even enjoyable, just like it did for me back in the day. Great for those who, like me, had to get creative with mess hall food to make it taste like home.
